Return to boil; then simmer until the water is absorbed, 10 to 15 minutes. Cool for 15 minutes. w w While quinoa is cooking, mix olive oil, lime juice, cumin, coriander, cilantro and scallions in a small bowl. Set aside. w w In a large bowl, combine black beans and chopped vegetables. Set aside. w w Once quinoa has cooled, combine all ingredients, including black pepper (if using), and mix well. In the $3 million remodeling project, about 10,000 square feet of space adjacent to the hospital’s inpatient pharmacy is being modernized to accommodate the lab. Faster results The new location is about 20 percent larger than the current location on the first floor and will allow for a more efficient workflow.
